Sleep in tomorrow morning. Make Overnight Oats tonight!

There is one meal I crave more than any other on school mornings: Peanut Butter and Banana Overnight Oats.

I crave it so much because I can’t just whip it up in the morning: it’s an overnight process to chill the yummy goodness.

So you’re up and it’s midnight and you want a quick breakfast for tomorrow so you can sleep in for a few more hours. Let me share my favorite recipe with you and I’ll explain what is so great about this easy, quick morning meal.

I was searching through Pinterest one day looking for some new recipes and found this one that I love: and decided to whip it up (shown below)!

Vegan Peanut Butter and Banana Overnight Oats


Ingredients (frevised from Domesticate Me recipe):
1 large banana, mashed
¼ cup creamy peanut butter
1 cup rolled oats (The orginal recipe says to not use quick-minute oats, but I’ve found them to work just fine!)
1 cup unsweetened almond milk (for less calories, can substitute with 1%, 2% or whole milk)
1 tablespoon chia seeds
½ teaspoon ground cinnamon


Chocolate Chips, Coconut Flakes, Granola, Peanuts, Almonds, Honey

You’re going to want to mash up the banana and add all ingredients together in either a Ziploc  container, mason jar, or bowl with saran wrap over it.

Mix all ingredients in together well enough so everything is evenly spread throughout the oats.

Prepare this the night before you want to eat it,, stick it in the fridge (covered),and top it with additional fruits and toppings the morning of!

It contains all the healthiest food groups to keep my full throughout the day and the best part is you can mix and match all the ingredients for your favorite breakfast items!

The key to the oats are to make sure you have an equal amount of rolled oats and liquid (milk: almond, soy, or dairy).

Add in fruit for additional fiber and sweetness. Add in seeds or nuts for additional proteins, vitamins, and benefits. Add in spices for that extra bit of flavor!

The best part about them: you can take them on the go in the morning before school so you can catch some extra Zzzz’s!
